Cucumber Sandwiches

1 fresh cucumber

Salt

4 slices good quality, white bread

Unsalted butter

White pepper

 

Thoroughly clean and remove all wax from the cucumber, peel, and thinly slice. Place the thin slices of cucumber into a sieve and sprinkle with salt. Allow to rest for no more than 20 minutes, then rinse off the salt and pat the slices dry with paper towels; set aside briefly.

Very lightly butter thin slices of good quality, soft, white bread (use unsalted butter only), and layer the slices on only two slices of the prepared bread. Sprinkle with freshly ground white pepper to taste. Top with the remaining slices of bread before pressing firmly and cutting away the crust. Slice the sandwiches into rectangles, or fingers, and serve immediately.
